Novozymes, headquartered in Denmark, has developed an enzyme, Ondea Pro, which has been introduced in China. According to the company, brewing with Novozymes Ondea Pro allows breweries to produce beer from unmalted barley, resulting in approximately 8 per cent less carbon dioxide emissions.
Malting of barley involves various steps, such as soaking the grain in water to allow it to germinate. The grain is then dried. By avoiding this step, carbon dioxide emissions can be significantly reduced. The new enzyme from Novozymes optimises the use of raw materials, reduces carbon emissions, and thereby produces a high-quality beer for the breweries.

Novozymes is able to produce more from less as the amount of material saved is greater when Ondea Pro is used. A brewer can reduce costs by saving up to 12 per cent of the barley required to produce a hectoliter of beer, while maintaining flexibility in raw materials. |
